Last week we had 2 days of non-stop ice & cold. I played around in the kitchen a little and came up with these fun muffins - which are too good not to share.
Winter weather is showing its head virtually everywhere this weekend. Why not whip these up before going out & hitting the sleds - or the slopes.
This recipe makes a bakers dozen (13), so I used a small ceramic soufflé cup & baked it in the oven right next to the tin.
Preheat oven to 350.
1 1/2 cups Unbleached, enriched flour
3/4 cup Ground Flaxseed meal
3/4 cup Oat Bran
3/4 cup Brown sugar
2 tsp Baking soda
2 tsp Baking powder
2 tsp Cinnamon
1 cup Raisins
3/4 cup Milk (I use 2%)
1 Medium Banana
1 tsp Pure Vanilla Extract
Sift together first 7 ingredients in a large bowl.
Mix in raisins.
In food processor blend together final 3 ingredients, then pour into dry mixture.
Mix (NO beaters - this is a thicker consistency) until the dry ingredients are fully coated.
Spoon mixture into lined muffin tin, filling cups about 2/3.***. As mentioned above I also lined a ceramic soufflé dish and had my bakers dozen.
Bake 15-20 minutes.
Top with 1 TBSP natural peanut butter for the perfect pre-workout snack!
***The mixture should be thick and you should not be able to pour it into the tin.
